Paneer Kathi Rolls/Paneer Tikka Wrap is a very popular and common street side food in India. It is a very filling and lovely snack and also it is a perfect wrap for tiffin box. Paneer Kathi Roll is made by wrapping paneer tikka and salad with rotis spread with Green chutney. When making wrap for tiffin box, please skip green chutney and salad so the wrap does not get soggy. Here’s how to make Paneer Kathi Roll with step by step photos and Video…

Ingredients
To Make Paneer Tikka
Paneer
200 gms
Yogurt/Curd/Thayir
6 tbsp
Onion
1 big chopped
Capsicum/Bell Pepper
1 chopped
Red Chillli Powder
1 tsp
Coriander Powder
½ tsp
Turmeric Powder
¼ tsp
Black Pepper Powder
½ tsp
½ tsp
½ tsp
Ginger Garlic Paste
½ tbsp.
Kasoori Methi/Dry Methi Leaves
½ tsp
Lemon Juice
1 tsp
Salt
As needed
Oil
2 tbsp

For Green Chutney – Mint Coriander Chutney
Mint/Pudina
One handful
Cilantro/Kothamalli
One handful
Green Chilli
1 chopped
Garlic Cloves
2
Ginger
One small piece
½ tsp
Amchur Powder/Dry Mango Powder
¼ tsp
Yogurt/Thayir
2 tbsp
Water
1-2 tsp

For Simple Salad
Cabbage
1/3 cup
Carrot
1 grated
Onion
1 thinly sliced
Chaat Masala Powder
½ tsp
½ tsp
Salt
One pinch
Lemon Juice [optional]
½ tsp

For Making Dough
Wheat flour
1 cup
Salt
As needed
Oil
½ tbsp.
Water
To make dough
Oil
For cooking chapatis

Method
Cut the paneer to medium size cubes and keep it aside.
In a wide bowl add yogurt/thayir, 1 tsp red chilli powder, ½ tsp coriander powder, ¼ tsp turmeric powder, ½ tsp black pepper powder, ½ tsp cumin powder, ½ tsp garam masala powder and salt.

Mix everything really well until all the masala is well combined.

Now add ½ tbsp. of ginger garlic paste, 1 tsp of lemon juice and  ½ tsp of crushed kasoori methi. Mix everything really well.
Add 1 chopped onion, 1 chopped capsicum/bell pepper and mix really well.

Add chopped paneer and mix well until masala is well coated.

Close it and keep refrigerated for 30 minutes or until we prepare green chutney, salad, dough etc.


Making Paneer Tikka for Paneer Roll - After 30 minutes

Heat 2 tbsp of oil in a pan/kadai. Add the marinated Paneer along with all the masala.

Cook the paneer on low medium flame.

After a minute turn the paneer cubes, keep turning now and then to avoid it from burning.

Fry until the marination is cooked and paneer is soft approximately 3-4 minutes. Do not cook for very long time, otherwise the paneer will become chewy.

Add chopped cilantro/kothamalli, toss well and switch off the stove.


Delicious and tempting Paneer Tikka is ready to make the Rolls.

Preparing Green Chutney - Mint & Coriander Chutney
Add one handful of mint/pudina, one handful of coriander/kothamalli leaves, 2 garlic cloves, 1 inch ginger chopped, 1 green chilli chopped, ½ tsp cumin powder and ¼ tsp of amchur powder/mango powder.

Grind to fine paste with 1-2 tsp of water. Add 2 tbsp of curd/yogurt, little salt and grind to fine paste and transfer it to a bowl.

Green Chutney- Mint Coriander Chutney is ready to make Kathi Rolls.

Preparing Simple Salad
Add 1/3 rd cup of cabbage, one grated carrot, one onion thinly sliced, ½ tsp chaat masala, ½ tsp garam masala powder, one pinch salt and drizzle of lemon juice.

Mix well until the masala is evenly spread. Simple Salad for Kathi Roll is ready.

Kneading Dough to make The Rolls
Add 1 cup of wheat flour to a wide bowl, little salt and mix well.

Add water little by little and make a soft pliable dough.

Add the oil and mix it in the dough really well. Cover it and keep it aside for about 30 minutes.

Making Rotis for Paneer Kathi Roll
After 30 minutes, divide the dough into small equal sized balls.

Dust some wheat flour and roll them to chapatis/rotis with rolling pin.

Heat the tawa and cook and rolled chapatis first on one side. Drizzle oil on the sides and flip it after few seconds. Then cook on both sides until done.

Similarly make rest of the rotis/chapatis and keep it aside.

Assembling the Paneer Tikka Rolls/Paneer Wraps/Paneer Tikka Wraps

Place one chapatti/roti, spread green chutney on top of it.

Next layer it with simple salad as shown.

Next layer the Paneer Tikka Masala as shown.

Roll it tight and wrap it with aluminium foil. If packing paneer roll for tiffin, then wrap the entire roll in aluminium foil and skip adding the green chutney and veggie salad.

Delicious, super filling and tempting Paneer Tikka Rolls is ready to be enjoyed.

Similarly prepare the rest of the Paneer Tikka Rolls/Wraps.
