Coffee & Walnut Cake For Birthday's/Coffee & Walnut Cake Recipe/Coffee & Walnut Cake with step by step photos

I wanted to make something special for my girl’s birthday. It has always been a vanilla or chocolate cake, so this time for a change I made Coffee & Walnut cake. I have baked simple cakes but this is my first walnut cake with icing. It just came out great and it was a hit. My girl is celebrating her birthday in London (school trip). So I made this cake at home before she left to the trip and we had a great time together.

Here's how to make it with step by step photo's ...


Ingredients
For the cake
Self Rising flour or All purpose flour
2 ½ cups
Butter
1 cup (room temperature)
Baking powder
2 tsp
Castor sugar
1 ¼ cups
Eggs
4
Milk
¾  cup
Vanilla extract
1 tbsp
Walnuts
1 cup finely chopped
Instant coffee
1 tbsp mixed in 1 ½ tbsp of water

For the icing

Double cream
1 cup
Castor Sugar
1 tbsp
Vanilla Extract
1 tsp
Vanilla pudding mix(optional)
1 tbsp

Method

In a bowl beat the eggs and keep it aside. Sift the flour and baking powder and keep it aside. Mix the coffee in warm water and keep it aside.


In a bowl cream together the butter and sugar with a hand mixer or a whisk. Now slowly add the eggs and keep whisking them until well blend.


Now add the milk and vanilla extract and whisk them. Slowly add the flour in “batches” and mix them real good with the hand mixer. Now add the coffee and chopped walnuts and mix them really good with a big spoon.


 Preheat the oven to 350˚ F or 180˚C. Grease 9″x13″ baking pan, place a baking paper (parchment paper) in the bottom and spray non stick spray along the sides.
Pour the batter to the baking pan and bake it in the oven for 30-35 min.


Check with the tooth pick to see if the cake has cooked, if the tooth pick comes out clear then the cake is done.

Remove the cake from oven, let it cool for at least 15 min, now slowly place it on plate, turn it upside down to get the cake out. Cut along the edges with knife if it is stuck to the pan.


Slowly remove the parchment paper and you are done with the cake.


Voila!!! Yummy Walnut & Coffee is ready…

For the Cream

In a bowl beat the heavy cream in a hand mixer on medium speed for 5 min. Stop the mixer, add sugar, vanilla extract, vanilla pudding mix and run the mixer until the cream is stiff enough.


Yes your cream is ready to be applied.

Note

I kept the cream in the refrigerator for 2 hrs, so that it will be easy to apply on the cake.

I added the vanilla pudding mix, so that the cream will be a little stiff. I saw this on you tube.

Adding coffee is totally optional it is totally your choice.

This cake does not need cream, it can be had as a evening cake just like that.
