Pineapple pancakes/Hawaiian Pancakes. Whenever we think about pineapples, the first thing that comes to all of us is the sandy beach and hot tropical climate. Here’s a cool pineapple pancake for a hot breakfast that gives the same tropical feel.
If you are in a holiday mood, thinking of Hawaii, then have these pancakes. They make your day a holiday.

Here’s how to make it with step by step photos ...

I made small bunny rabbits with cookie cutter in these pancakes, you can as well make it for Easter and give it to kids.


Ingredients

All purpose flour                                          1 cups
Pineapple                                                      ½ cup cut in to cubes
Baking Powder                                            2 tsp
Sugar                                                             2 tbsp
Salt                                                                 ¼ tsp
Eggs                                                               1
Buttermilk                                                    1 cup
Butter                                                            2 tbsp

Method

In a deep bowl whisk the eggs well. Now add the buttermilk, sugar, salt and mix it good.
Sift the flour and baking powder together and add it to the egg mixture. Make sure there are no lumps. Now add the pineapple pieces to the mixture.


Heat the tawa or griddle, pout one big ladle of batter and add butter along the edges
(or use few drops of oil or non stick spray). Cook evenly on both sides (light brown).



Yummy pineapple pancakes are ready to be served.

Serve it with maple syrup and butter. You can as well serve it with honey.
