Almond Cookies/Badam Cookies [Eggless]

Hello everybody, since it is weekend I thought I will make some cookies and share it with you all. These cookies are very filling, healthy and perfect with a cup of milk for your kids. Just try these and you will surely love it…

Here’s how to make it with step by step photos…


Ingredients

All purpose flour/Maida
3 cups
Butter
¾ cup melted
Castor sugar/Powdered sugar
1 cup
Almond powder
1 cup
Baking powder
2 tsp
Vanilla extract
2 tsp
Milk
¼ cup or 4 tbsp
Whole almonds
35
Nutmeg powder(optional)
One pinch

Method

In a wide bowl beat the butter and powdered sugar well with a whisk. Add the baking powder and mix it really well.

Add the vanilla extract, the almond powder, nutmeg powder and mix really good.
Now add the all purpose flour in batches and mix with the help of spatula. Add the required amount of milk slowly to form a soft dough ball.


Preheat the oven to 180°C (360°F). Cut the parchment paper and place it in the baking trays.


Make small lemon sized balls in the dough, flatten it a little to make small disc and arrange it in the tray about 2 inches apart. Insert one almond in to each of the cookies as shown in the photo.

Bake it in the oven for 15 – 20 min or until golden brown.

Remove it from the oven and cool it in the wire rack for about 15 -20 min and keep in air tight container.

The above measurement makes about 33 to 35 cookies of medium size.


Suggestions:

I have used 1 cup of almond powder, you can use ½ cup almond powder and ½ cup cashew nut powder which also will taste great.

You can make bite size cookies by making small balls and then bake it.

If you want you can add one egg and beat well before adding the almond powder, and make sure you add less milk accordingly.

Yummy and delicious almond cookies are ready, enjoy it with a cup of milk or tea.
