Method

Heat 3 tbsp of oil+ghee to a pressure cooker or heavy bottomed vessel.

Add cinnamon sticks, cloves, cardamom, mace, bay leaves, cumin seeds and wait until nice aroma fills the room.

Now add the sliced onions, green chillies, little salt and mix really well.

Saute the onions really well until they turn to light golden color.

Add 2 tbsp of ginger & garlic paste and saute well until the raw smell vanishes.

Add the green peas and saute really well for about a minute.

Now add a handful of cilantro/mint and saute until it shrinks.

At this stage add 3 cups of coconut milk +water to the pressure cooker and let it come to rolling boil.

Add the washed and soaked basmati rice and give a gentle stir. Let it come to rolling boil.

Cover and cook for about 12-15 minutes on medium flame without whistle. After 12 minutes, open the lid and check if the rice is cooked or keep it for some more time or until done.  Note: After 6-8 minutes, you can keep the cooker on top of an old tawa and cook the rice covered with a lid. If you are using pressure cooker, then cook for one whistle.

When the rice is done, open the lid and give a gentle stir.

Heat about 2 tsp of oil in a kadai, add 10 broken cashew nuts, fry to golden brown color and switch off the stove.

Transfer the fried cashew nuts to the Peas Pulav.

Yummy, delicious and tempting Peas Pulav is ready to be enjoyed. Serve it hot with MixedVegetable Kurma, Egg Masala and Hyderabadi Chicken 65.
