Focaccia Bread with Onions, Olives & Herbs [Italian Bread]

Focaccia is an Italian bread, which can be made either savory or sweet. It is one of the easiest breads to make, here I have made Focaccia with onions, olives and herbs as toppings. It can be changed according to your taste as well. I have had focaccia bread several times but wanted to give it a try. So I referred to food network  and made it for my kids. The bread came out great, so I thought I will share it with you all.

Here’s how to make it with step by step photos…


Ingredients

All purpose flour/Maida
3 ½ cups
Dry Yeast
2 tsp
Warm water
1 cup
Sugar
1 ½ tbsp
Olive oil
2 tbsp
Salt
As needed

For Topping

Olive oil
2 tbsp +1 tbsp for baking tray
Onion
1 thinly sliced
Black olives
6 (slice them to rings)
Mixed Italian Herbs
1 tbsp
Black pepper powder(optional)
½  tsp

Method

Mix the dry yeast with the warm water along with sugar and keep it aside for 5 min. It will form foam as shown in the photo.


Take the flour in a bowl; add the required amount of salt. Slowly add the yeast water, oil and make the dough. Knead the dough until smooth and make a ball. Place the dough ball in a well oiled bowl and cover it with damp tea towel or plastic wrap. Keep it aside for 45 min in a warm place. The dough will double its size.


Now apply 1 tbsp of olive oil or non stick spray to the baking tray.  Remove dough from the bowl and roll out on lightly floured surface in to rectangular shape of ½ inch thickness. Now transfer it to baking tray and cover it with plastic wrap or tea towel and keep it aside for 15 min.

Meanwhile preheat the oven to 220 ˚C. In a pan heat one tsp of oil, add the sliced onions and caramelize(saute until the onions are translucent) it in the stove top and keep it aside.


Now open the plastic wrap from the baking tray, the dough will again double its size. Now make dents with your fingers all over the dough. Pour the olive oil all over the dough.

Sprinkle the caramelized onions, olives, Italian herbs, black pepper powder all over the dough. Bake it in the oven for about 20 min until golden brown.


Allow the bread to cool completely before making slices.

  1. I have made focaccia long time ago and its a wonderful bread just like this you have made. I adore the sponged up effect, perfectly with the savory punch, either on its own or for a dip with soups.
