Urad dhal Vadai/Medhu Vadai/Ulundhu Vadai

Urad dhal vadai is a very common snack in Southern India. It is made on all special occasions and festivals. It is a perfect evening snack with hot piping tea or coffee. One vadai is always never enough for anyone. Once you start eating it you always want more. Do check out other Vadai Varieties here.

Here’s how to make it with step by step photos…

Ingredients

Urad dhal/Ulundhu
1 cup
Big onion
1 finely chopped
Green chillies
2 or 3 finely chopped
Ginger
½ inch piece finely chopped
Curry leaves
6
Cilantro
One handful finely chopped
Rice flour
1 tsp
Salt
As needed
Oil
For frying vadai

Method

Wash and soak the urad dhal for at least 4 to 5 hours. Now grind it in the grinder or mixer to a very fine paste. Don’t add water when grinding the dhal, just sprinkle little water when needed. When grinding the dhal add the required salt, so that it will loosen up the dhal.

Transfer the ground dhal to the bowl. Add rest of the ingredients except the oil and mix it really good.

Heat oil in a kadai, when it is ready make vadai as shown in the photo and fry them to golden brown evenly on both sides.

Note:
The urad dhal after grinding should never be watery.

If, by mistake the urad dhal has gone watery add some more rice flour and urad dhal flour to fix the mixture.

Some people do not prefer onions on pooja days, in that case you can just add some black pepper corns and fry the vadai.

  1. Glad that you added generous amount of chilies, onion and herbs. I can see the contrast of colors on top of the vadai and this is what I call a snack with punchy flavors. Gosh! another of my fav.
