Mulai Keerai Poondu Masiyal Recipe/Amaranth & Garlic Masiyal/Mulai Keerai Poondu Kadaiyal Recipe with step by step photos & Video

Mulai keerai poondu masiyal is one of my favorite dishes, it is very healthy and very easy to make. My mom makes it atleast 2 to 3 times a week.  It needs very less ingredients  and very less time to prepare, but has a wonderful buttery taste. This masiyal is one easy way to feed the small kids the greens. My amma makes this masiyal in "kal chatti" and "matthu" which is exactly the traditional way to make this masiyal.  Ingredients
Mulai keerai/Amaranth leaves
1 bunch
Garlic
12-14
Mustard seeds
½ tsp
Cumin seeds
½ tsp
Dry red chillies
3-4
Oil
1 tsp
Salt
As needed

Method
Clean the mulai keerai, remove the hard part of the stem [thandu] and discard it. Keep the soft part of it as it has lots of fiber. 

Add the cleaned mulai keerai to a big vessel and add lots of water. Add little sea salt and mix thoroughly. Soak for about 15-20 minutes to get rid of virus, pesticides, bacteria etc. Wash thoroughly 3-4 times and drain the water.


Thoroughly cleaned Mulai Keerai is ready for cooking.


In a thick bottomed vessel/Chatti add the washed keerai, garlic, salt, 3/4 cup water and cook on low flame.

The Keerai will wilt down and cook in about 5-6 minutes. Now switch off the stove and let it cool down completely.


When the greens are cooked and soft, mash it with “Matthu” or potato masher or just run it in the mixer just once or twice. Transfer it to a bowl and keep it aside.


In a kadai heat oil and splutter mustard seeds. Now add cumin seeds, dry red chillies and sauté for 15 sec. 


Add this tempering to the already mashed keerai.


Delicious and healthy mulai keerai masiyal is ready to be enjoyed. Serve it with hot white rice and ghee.
