Carrot Kheer(Payasam)

Carrot Kheer (payasam) is a light and healthy dessert. It is easy to make and can be done very fast, when you have unannounced guest. 


Ingredients

Carrots
250 gm
Milk
2 ½ cups
Ghee
1 tbsp
Cashewnuts/almonds/pista’s
6-8
Raisins
8-10
Sugar
½ cup
Elachi (Cardamom)
¼ tsp  
Condensed Milk
3 tbsp


Method

Clean, peel and cut the carrots. Now cook the carrot’s either with 1 cup of milk or water. After it is cooked blend the carrots in mixer.

In a deep dish add the ground carrots, milk and bring it boil. Keep stirring. Now add the sugar and condensed milk. Let boil for 5 to 10 min’s.

Next in pan heat ghee, add cashew nuts and sauté then add the raisins and add it to the carrots. Add the elachi powder and mix it well.



Garnish it with almonds and serve it either hot or cold.

Yummy,addictive and delicious carrot payasam is ready to be served.
